Course Information
Description This course introduces general nutritional concepts in health ad disease and includes practical applications of that knowledge. Special emphasis is given to nutrients and nutritional processes including functions, food sources, digestion, absorption, and metabolism. Food safety, availability, and nutritional information including food labels, advertising, and nationally established guidelines are addressed.
Prerequisites Basic skills competency in reading and math required.
Learning Outcomes 1. Apply nutritional knowledge to analyze personal dietary intakes, to plan nutritious meals
using nationally established criteria to meet recommended goals, and to evaluate food labels and the validity of nutritional claims.
2. Trace the pathways and processes that occur in the body to handle nutrients and alcohol
through consumption, digestion, absorption, transport, metabolism, storage and waste excretion.
3. Discuss functions, sources, deficiencies, and toxicities of macro-and micronutrients,
including carbohydrates, lipids, proteins, water, vitamins, and minerals.
4. Apply the concept of energy balance and its influences at the physical, emotional, societal,
and cellular level to evaluate advantages and disadvantages of various methods used to
correct energy imbalances.
5. Utilize concepts of aerobic and anaerobic energy systems, and knowledge about
macronutrients, vitamins, minerals, ergogenics, and supplements and relate them to fitness
and health.
6.Describe health and disease issues related to nutrition throughout the life cycle, including
food safety, corrective dietary modifications, and the influence of specific nutrients on diseases.

Final Grade
Your grade for this class will be the average of your 4 exam grades (20% each), your average of the online Mastering Nutrition homework and any other assignments posted during the semester (20%). Any assignment or exam not completed will receive a grade of "0". No makeup exams are given and there are NO “re-takes”/"re-dos" on any exam or assignment. Exams and/or assignments not taken/completed will receive a grade of "0". No grades are dropped when calculating averages.

Course Policies
Instructor Policies Please read the Online Orientation & Course Policies document posted on the course website for a full list of course policies.
Respondus Lockdown Browser (RLB) MUST be installed on any computer used to take an exam for this course. Please see the RLB installation and use guide sheet posted on the course website. Most versions of chromebook are NOT compatible with RLB. If you cannot install RLB on your computer for ANY reason, you will have to make arrangements to take the exam elsewhere. Exams/quizzes may be taken at a computer lab at LSCPA. Having a computer available and taking exams by their due date is the sole responsibility of the student.
It is imperative that you check your email EVERY DAY. This is an online class and email is the only method I have to contact you. If you wish to email me about a grade, you must email me from the "send email" link within the course website.
Students involved in the use of plagiarism including the use of "spin-bots" will be penalized as outlined in the individual assignments and/or at the instructor's discretion.
Students suspected of engaging in academic dishonesty during online exams may be required to come to campus to complete an exam in a proctored environment.
Attendance Policy This is an online class and it is the responsibility of each student to have a RELIABLE computer AND Internet access for the duration of the course. Computer labs at LSCPA are available for use. Please note that some course material may not be accessible using a cell phone and/or tablet device.
In this online class there are no scheduled class "meeting times" and it is your responsibility to manage your schedule to complete course requirements by their due dates. All lectures have been recorded and the links to these videos are posted on the course website and in the notes posted for each chapter. You may email me at any time with questions.
If you wish to have a virtual office visit, please email me a specific day/time and I will email you a zoom link.
